Note: This Improved Holland Gin cocktail is a variation of the classic Holland Gin cocktail and includes absinthe and maraschino liqueur. Be sure to use a good quality absinthe, and to only use a small amount, as it can be quite potent.To “express” the oils from the lemon peel, hold the peel over the drink, with the shiny side facing down, and twist it gently to release the oils. Rub the peel around the rim of the glass, then drop it into the drink.

60 ml Eden Genever
1 dash of absinthe
10 ml maraschino liqueur
10 ml freshly squeezed lemon juice
10 simple syrup
1 dash orange bitters
Lemon peel, for garnish
Instructions
Fill a mixing glass with ice.
Add Eden Genever, absinthe, maraschino liqueur, lemon juice, simple syrup and orange bitters to the mixing glass.
Stir for about 20 seconds until well chilled.
Strain the mixture into a chilled coupe or cocktail glass.
Express the oils from a lemon peel over the top of the drink.
